Roasted Coconut Butter Cookies

Once again, cookies are one of my favorite foods. This time I made them using a product by one of my favorite companies . I love coconut, and if you love coconut you will love these cookies. The roasted coconut butter by eatingEVOLVED is so delicious. You can purchase it here.

One important step that is involved in making these cookies is to make sure that you soften the coconut butter. You can do this by letting the jar sit in a bowl of hot water for a few minutes. Also you want to make sure that you use a thick nut butter for this recipe. I used cashew butter but if you use a nut butter that is too runny, the dough will not form. This recipe makes 16 small cookies.

Ingredients

1/2 cup roasted coconut butter (softened)

1/2 cup thick nut butter (make sure that it is not runny)

1/2 cup coconut sugar

1 egg (room temperature)

1 cup almond flour

1/2 tsp baking soda

1. Preheat your oven to 350 F. Blend the coconut butter, nut butter and coconut sugar together until the ingredients are combined (with an electric mixer). Add in the egg,  and blend just until the ingredients are combined.

2. Add in the almond flour and baking soda and blend.

3. Line your baking sheet with parchment paper. (It makes cleanup a lot easier) Shape the dough into balls, and flatten them just a little bit on the baking sheet. Bake for 8-10 minutes or until they turn a little golden brown around the edges. After these cookies cooled off, I drizzled them with more coconut butter and sprinkled some toasted coconut flakes on them.
