Baked Lemon Pepper Chicken

This chicken. It's probably one of my favorite things that I've ever made. It's juicy, tender, and full of flavor -- everything that chicken should be. I cook this chicken in my cast iron skillet, because it creates incredible flavor, and it also helps the chicken to brown too. It creates the crispiest skin, even on skinless chicken.

Lemon Pepper Chicken
Ingredients
  • 1 lb chicken breast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp lemon pepper seasoning
  • 2-3 tbsp olive oil or butter
  • 1 lemon
  • Cast Iron Skillet or Oven Safe Pan
Instructions
Preheat your oven to 350 F. Wash your chicken and season it with the salt, black pepper, garlic powder, onion powder and lemon pepper seasoning. Heat the olive oil or butter in your cast iron skillet or pan. Add the chicken and brown on both sides (5-7 minutes per side). Then slice the lemon and place the slices on top of the chicken breast. At this point you should also add a little more olive oil or butter to the skillet. Bake the chicken for 20-25 minutes, depending on the thickness of the chicken breast. Remember that the chicken is already partially cooked so be careful not to overcook it. Flip the chicken halfway through.
