Sun-Dried Tomato Cream Sauce

If I had a favorite food, it would probably be pasta. Recently I've really been into lentil pasta. It's more satisfying than regular pasta because it's filled with protein. Don't get me wrong though. I have nothing against regular pasta. Eat what you love. This isn't even really about the pasta though. It's all about the sauce. 

I have actually really been into making my own pasta sauce lately. It's so easy to customize sauces and you don't have to worry about them being filled with junk, like some of the brands that are in the stores. Plus, pasta sauce tastes sooo good and fresh when it's homemade. I have not tested a diary free version of this sauce yet but as soon as I do will post the substitutions.

Sun-Dried Tomato Cream Sauce
This cream sauce goes perfectly with your favorite pasta.
Ingredients
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1/3 cup sun-dried tomatoes
  • 1 cup milk
  • 1/3 cup grated parmesan cheese
  • 1 tsp arrowroot powder/flour
  • salt and pepper to taste
Instructions
Heat the olive oil in a medium sauce pan over medium/high heat. Add in the garlic, and sun dried tomatoes. Let them simmer over medium heat for about 5-6 minutes. Add in the milk and bring to a boil. Whisk in the parmesan cheese. Turn the heat back down and simmer over medium heat for about 15 minutes. Remove from heat and whisk in the arrowroot powder. Let the sauce sit for about 5 minutes stirring occasionally. Then blend all of the ingredients together and enjoy with your favorite pasta! I love to have this sauce with lentil pasta.
