Sweet Potato Casserole
Sweet Potato Casserole is my favorite Thanksgiving dish. I always look forward to it every year. My mom always made it when I was growing up. My favorite part is the crunchy pecan brown sugar topping. For this recipe I used traditional ingredients, but I used half the sugar and butter that a normal sweet potato casserole calls for. I wanted to lighten up this dish a bit.

The main ingredients are for the sweet potato base are:
sweet potatoes
cream
maple syrup
cinnamon
nutmeg
butter
eggs
The ingredients for the brown sugar pecan topping are:
pecans, flour, brown sugar, butter and a pinch of salt.
How to Make Sweet Potato Casserole
The first step is to peel and cook the sweet potatoes. I like to cut the into big chunks and them boil them for about 30 minutes.
Then mash the sweet potatoes and mix the eggs, cream, maple syrup and other ingredients together. Then the egg mixture goes into the mashed sweet potatoes to get mixed really well.
The next step is to mix the ingredients for the pecan streusel topping. After you mix the ingredients for the topping they should be nice and crumbly.
Sweet Potato Casserole
ingredients:
- 3 medium sweet potatoes
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup heavy cream
- 1/3 cup maple syrup
- 3 tbsp melted butter
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 3/4 cup chopped pecans
- 3 tbsp flour
- 1/4 cup brown sugar, packed
- 3 tbsp butter, softened
- Pinch of salt

How to cook Sweet Potato Casserole
- Preheat oven to 350F. Peel the sweet potatoes and cut them into large chunks. Boil for 30 minutes or until you can easily pierce the sweet potatoes with a fork. Once the sweet potatoes are done boiling, drain them then put them in a large boil. Then mash them very well.
- While the sweet potatoes are cooking, mix the eggs vanilla, extract, cream, maple syrup, melted butter, cinnamon and nutmeg. Then add this mixture to the mashed sweet potatoes and mix well. Use a hand mixer if you have one.
- Transfer the sweet potatoes to a greased 8x8 baking dish or pan.
- Mix all the ingredients together until well combined. Then evenly distribute the topping over the sweet potato casserole.
- Bake for 35-40 minutes or until topping is crunchy and sweet potatoes look slightly puffy.
